A light Japanese-style miso soup
INGREDIENTS
- 2 cups boiling water
- 2 handfuls kale, shredded
- Green tops of 2-3 spring onions, finely sliced
- 5.5 ounces firm tofu, cut into 1 cm cubes
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1-2 tablespoons miso paste
INSTRUCTIONS
- Place the water in a saucepan on a medium heat
- Add the kale, spring onion, tofu, rice vinegar and soy sauce and simmer for 1 minute
- Take the pan off the heat and stir through 1 tablespoon of miso paste
