Eggs Mexican style

Eggs Mexican style

(350 calories)

Ingredients:

  • 1 egg

  • ½ cup egg whites

  • 1 tsp butter

  • 2 Tbsp. shredded cheddar cheese

  • 1/3 cup black beans

  • Fresh salsa

  • Salt

  • Pepper

  • Cilantro

Directions:

1. Heat skillet over medium heat with 1 tsp of butter

2. Whisk one egg with the egg white and a dash of salt and pepper in a bowl.

3. Add the egg mixture to the skillet

4. Allow eggs to set a few minutes before stirring

5. Rinse canned black beans in colander

6. Heat in microwave for 1 minute

7. Add cilantro and cheese to the egg mixture

8. Stir the eggs until they appear to be clumping but are still shiny but no longer runny

9. Serve on a plate over the warm black beans and top with fresh salsa
