Low FODMAP Miso Soup

A light Japanese-style miso soup

INGREDIENTS

  • 2 cups boiling water

  • 2 handfuls kale, shredded

  • Green tops of 2-3 spring onions, finely sliced

  • 5.5 ounces firm tofu, cut into 1 cm cubes

  • 1 tablespoon rice vinegar

  • 1 tablespoon soy sauce

  • 1-2 tablespoons miso paste

INSTRUCTIONS

  1. Place the water in a saucepan on a medium heat

  2. Add the kale, spring onion, tofu, rice vinegar and soy sauce and simmer for 1 minute

  3. Take the pan off the heat and stir through 1 tablespoon of miso paste
